Recipe: Deliciously different pancakes

With pancake day just around the corner, here’s a great alternative, easy pancake recipe that uses only three ingredients. Healthy, milk free, wheat free and incredibly tasty, these are the perfect breakfast pancake.

Ingredients:

Makes 2 small pancakes/serves 1

  • 30g oats
  • 1 ripe banana -mashed
  • 1 medium egg

Method:

  • Mix all ingredients together in a medium bowl or glass jug until fully combined.
  • Cook in a small amount of oil in a frying pan over a low/medium heat, gently flipping once. Keep an eye on these at all times as they can brown very quickly.
  • Enjoy with berries, yogurt, maple syrup, honey or whatever you choose.
